Tasting
Très jeune, la robe est d’un jaune doré, avec des nuances vertes. Le nez fermé s’ouvre peu à peu sur une foule d’arômes à la fois intenses et d’une grande finesse. On peut discerner le melon, la mangue, le citron confit, des notes de fleurs blanches et de menthe. La bouche concentrée possède une grande longueur et semble toujours amener de nouvelles sensations. Même fermée, elle dégage une impression de complexité, de force et d’élégance. La finale reste fraîche avec des notes de raisins de Corinthe et minérales.

Le raisin arrive dans des bacs qui sont vidés dans un pressoir pneumatique moderne, horizontal. Le pressurage dure beaucoup plus longtemps que pour les vins blancs secs. Il faut environ 4 heures ou plus pour presser le contenu. Ce sont les jus les plus riches qui sortent les derniers.

Terroir
The Sauternes terroir covers 2,200 hectares 40 km from Bordeaux, between the left bank of the Garonne and the Landes forest. The Sauternes appellation takes in the communes of Sauternes, Bommes, Fargues, Preignac and Barsac. The Suduiraut estate extends over 200 hectares, of which 92 hectares are under vine, on soils composed essentially of sandy-clay gravel. The region's microclimate brings sunny, warm autumn afternoons following the morning mists. This causes, or at least stimulates, the appearance on the grapes of Botrytis cinerea, or noble rot.
