Winemaking
Stainless steel tanks filled by gravity. Cold maceration for 10 days at 8 degrees C. Long maceration (35 days). Exclusive use of rack and return during the fermentation. The harvest of the 2009 vintage took place in a time of excellent meteorological conditions. Picking of Merlot began on September the 30th 2009, ending on October the 13th 2009 with Cabernet Sauvignon.
Ageing
60% of new barrels and 40% of 1 year old barrels. Time of maturation: 14 months.
