Winemaking
The week of the 20th of September 2004 was the beginning of the merlot harvest. The cabernets sauvignons grapes were collected beginning the first of October. This year, we delayed our harvest in order to obtain completely ripe fruits. Vinification method: traditional in stainless steel vats with an automatic thermoregulation and a vatting of 18 to 22 days.
Ageing
Ageing: 12 months in new barrels for 33%. All of our barrels are in French oak.
Terroir
Gravel over calcareous and silicious clay.
