Tasting

Élégant-e (adj.) : Qui se caractérise par une grâce faite d'harmonie, de légèreté et d'aisance dans la forme et les lignes, dans la disposition et les proportions des parties, dans le mouvement. L'accord fruits/fleurs du millésime 2021 est enchanteur. Le vin s'ouvre sur des notes gourmandes de fraises des bois tandis qu'une rose tout juste épanouie évoque une nature fraîche. L'évolution s'affirme florale, avec des notes délicates de pivoine et de sève blanche. En contrepoint palpitent les épices du poivre, du chocolat, de la framboise. L'attaque est vive et onctueuse à la fois. Elle explore la double facette de l'orange sanguine, sucrante et acidulée, puis laisse en bouche une douce amertume. Des équilibres sur l'arête, caractéristiques du cabernet-sauvignon vendangé au point médian de sa maturité et qui excelle.
