Winemaking
Initial sorting in the vineyard. Manual destemming berry by berry and sorting table. Transfer into 30-70 hl wooden vats by gravity flow. Pre-fermentation cold maceration at 8°C. Punching down entirely by hand. Maceration period: 30 to 40 days. Direct running-off into French oak barrels by gravity. Malolactic fermentation in barrels. Harvest from 15 September to 3 October 2017.
Ageing
Aged for 18 months in barrels.
Terroir
Clay gravels dating back to the end of the Pliocene epoch and the Quaternary period.
