Premier tri à la vigne. Égrainage manuel grain par grain et tri sur table. Mise en cuves bois de 30 à 70 hl par gravité. Macération pré-fermentaire à basse température (8°C). Pigeages entièrement manuels, durée de macération de 30 à 40 jours. Écoulage direct en barriques de chêne français par gravité. Fermentation malolactique en barriques. Œnologue conseil : Michel Rolland.

Nappe de graves argileuses pyrénéennes datant de la fin du pliocène et du quaternaire ancien. La forte proportion d’argile dans ces sols est un atout indispensable pour la complexité que l’on retrouve dans les vins du domaine.
