Tasting
Château Haut-Batailley 2021 shows a lovely aromatic freshness and a structure of ripe tannins. Its blend, strongly dominated by Cabernet Sauvignon, places it among the great Pauillacs. It is characterised by a precise palate of violet and black fruit aromas, carried by a saline finish. A great deal of style and finesse for a well-balanced vintage.

Winemaking
Hand-picked, with selective sorting in the vineyard and on the table. Picking began on 27 September. The Merlot was harvested over five days and the Cabernets over seven days, until 9 October. A first sorting was carried out in the vineyard. The crop was then transported in 200 kg bins. A second, then a third sorting took place, before and after destemming. Vatting lasted three weeks, with successive pumping-over and délestage. Once drawn off, the wines underwent malolactic fermentation in vats.
Ageing
Ageing: 16 months in French oak barrels (70% new oak).

Appellation: Pauillac. Surface: 41 hectares. Soil: Garonne gravel.
