Winemaking
The grapes remain in a cold room at 7°C for 12 hours before optical sorting. Plot vinification in thermo-regulated stainless steel vats filled by gravity. Cold pre-fermentation (8-10 degrees), hot post-fermentation (30 degrees). Alcoholic fermentation with pump-over and punching down. Malolactic fermentation in vats (75%) and barrels (25%). Vatting: 28 to 30 days. 10% in whole bunch vats (young Merlot vines).
Ageing
50% new barrels (including 12% 500L barrels). 2% TAVA amphorae.
Terroir
Limestone plateau, clay-limestone slope, more siliceous foot of the slope.
