Tasting

Wine style: rich and powerful. Appearance: Château de Cruzeau benefits from a beautiful south-facing orientation. The 2011 sun rays allowed for a slow and complete ripening of the grapes. The colouring matter is very dense, coating the glass with a magnificent deep purple red. Nose: tasted shortly after bottling, the wine already reveals itself to be elegant. Vanilla fragrances underline the red fruit, vanilla and raspberry, which escape in small touches. Palate: the wines of Château de Cruzeau are known to be built for ageing. The 2011 will not disappoint. One perceives the power of the tannins, contained by a smooth and generous structure. Its promising finish will allow it, in three or four years, to enhance meats in sauce and game. It would, for example, be perfect with stuffed quail!

Harvest: hand-picked or mechanical after manual selection in the vineyard. Fermentation: in temperature-controlled stainless steel tanks with a patented cap-breaking system. Fermentation temperature: 28 to 30°C. Malolactic: yes.

Ageing

12 months in barrels (30-40 % new) with quarterly racking. Fining: with egg white.
