Winemaking
The grapes pass over a vibrating sorting table before being crushed, destemmed and then pumped into tanks. These are partly epoxy-coated concrete and partly stainless steel. Alcoholic fermentation lasts around 10 days, during which pump-overs are carried out. A 2-week maceration is followed by drawing off, during which the free-run wine and the press wine are separated, the latter obtained by pressing the cap of skins. Malolactic fermentation begins in tank for both the free-run wine and the press wine. Ageing, 40% in new barrels, lasts 18 months for the grand vin and 12 for the second wines. It takes place in Château Chasse-Spleen's semi-underground cellar.

Terroir
The vineyard, covering 80 hectares, lies at the highest point of the Grand-Poujeaux gravel ridges. The soil is 80% Garonne gravel over a subsoil of asteriated limestone (calcaire à astéries), the remaining 20% being clay-limestone. The plantings consist of 73% Cabernet Sauvignon, 20% Merlot and 7% Petit Verdot. The average age of the vineyard is 30 years. Cultivation follows traditional methods (earthing-up and unearthing of the vines) and the harvest is done by hand. The Chasse-Spleen terroir yields structured wines with character and good ageing potential. Vineyard management at Chasse-Spleen is conventional.
