Vinifications Intra-Parcellaires : le cuvier gravitaire reçoit la vendange par petit cuvons de 3hl acheminés par ascenseur. Il comprend 22 cuves tronconiques en béton brut, thermorégulées dans la masse, qui accueillent le millésime par unités parcellaires. Fermentation Alcoolique : T° régulée entre 26° et 28°C en fonction du potentiel des cuves et de l'extraction tannique souhaitée. Remontages doux et sur-mesure. Cuvaison entre 3 et 4 semaines. Fermentation malolactique en barriques.
