Vinifications Intra-Parcellaires : le cuvier gravitaire reçoit la vendange par petit cuvons de 3hl acheminés par ascenseur. 22 cuves tronconiques en béton brut thermorégulées dans la masse, accueillent le millésime par unités parcellaires. Macération préfermentaire à froid. Fermentation Alcoolique : T° régulée entre 26° et 28°C en fonction du potentiel des cuves et de l'extraction tannique souhaitée. Cuvaison entre 3 et 4 semaines. Fermentation malolactique en barriques neuves pour les meilleures cuves.
