Winemaking
Vineyard: surface area in production in 2020: 32.3798 ha. Production 2020: 1,111 hl. Sustainable agriculture, sexual confusion, plowing of the soil, disbudding, leaf stripping, thinning. 2020 harvest date: Malbecs Sept 16th, Merlots from Sept 16th to Sept 28th, Cabernets-Francs Sept 29th and 30th, Cabernets-Sauvignons Sept 30th, Carménères Sept 30th. Manual harvest in crates, double sorting of the grapes (vibrating table, Tribaie and Qualibaie), gravity vatting, vinification by gentle pumping over and/or delestage, vatting for 18 to 24 days in 2020, malolactic fermentation partly in new barrels.
Ageing
Ageing 16 to 18 months: 100% in barrels of which 50% new.
Terroir
Commune of Saint-Étienne de Lisse, on the East part of the appellation. Soil: limestone plateau and limestone and clay slopes. The Estate has a total surface of 41 hectares, in one block, out of which 36 ha of vines (32.2040 hectares of vineyard in production in 2016). A part of the vineyard is established in terraces built on the steep slopes.
