Winemaking
Minimum intervention viticulture, ploughing of the soil, canopy management and thinning out of the vines. Vintaged by hand into small crates, a double sorting of the grapes (on a vibrating sorting table and a sorting machine by density), gravitational filling of the fermentation vats, vinification with punching down and/or pumping over; followed, in 2016, by 18 to 24 days of maceration. A certain amount of the new wine went through malolactic fermentation in barrel.
Ageing
20 months, of which 18 months in barrels (65% new).
Terroir
Commune of Saint-Étienne de Lisse, on the East part of the appellation. Soil: limestone plateau and limestone and clay slopes. The Estate has a total surface of 41 hectares, in one block, out of which 36 ha of vines (32.2040 hectares of vineyard in production in 2016). A part of the vineyard is established in terraces built on the steep slopes.
