Les baies sont vinifiées séparément par parcelles et par cépages afin de laisser s’exprimer la diversité des terroirs. La vinification s’effectue dans deux cuviers : l’un en bois utilisé pour les plus vieilles parcelles, l’autre en inox entièrement rénové en 1997.

Terroir

Les vignes du Château Desmirail, d’un âge moyen de trente ans, couvrent une superficie d’un peu plus de trente hectares comme lors du classement de 1855. Le vignoble repose sur des graves profondes qui se sont mises en place pendant l’ère quaternaire, entre 650 000 et 250 000 ans avant notre ère. Ces graviers et galets, qui proviennent des montagnes pyrénéennes, ont été roulés par les eaux de la Garonne et se sont déposés en formant des terrasses. Ces dépôts ont été ensuite érodés, si bien qu’ils se présentent aujourd’hui sous la forme de croupes graveleuses qui culminent autour d’une vingtaine de mètres d’altitude. Le vignoble de Desmirail est réparti sur trois communes de l’appellation Margaux : Cantenac, Arsac et Soussans.
