Tasting
Au premier nez, complexité aromatique, raffinement apporté par une climatologie optimale. La proportion importante de merlots apporte ce fruité rouge et noir particulièrement intense. Notes de framboises, cerises, mûres, cassis, le tout dans un univers balsamique, pâtissier, subtilement sucrant. Une attaque également signée par l’influence du merlot, onctuosité, un aspect enveloppant et tapissant de la bouche dominent. Le cabernet franc apporte une grande fraicheur en milieu de bouche.

Winemaking
Les grandes lignes de la vinification à Cheval Blanc reposent sur une maturation fraiche des raisins, une vinification parcellaire pure, des levures indigènes (sélectionnées sur le domaine), une extraction douce, une macération longue, des remontages manuels et un seul délestage au cours de 4 semaines de cuvaison. La fermentation malolactique se fait en cuve, puis les vins sont élevés en barriques.

Terroir
Cheval Blanc's mosaic terroir of clay, sand and gravel is unique. Two good fairies watched over its cradle: Pomerol and Saint-Émilion. Soils and subsoils, configuration, sedimentation, water and mineral deficit — everything here combines to achieve the required concentration and to shape the wine's ageing. It is a very ancient history, going back to the Quaternary and to the sediments of the nearby Isle river. A geological union for an exceptional wine, for the quality of the soil determines the success of the grape variety. At Cheval Blanc, the conjunction of a terroir of the very highest quality with an unusual varietal mix gives the wine a unique organoleptic personality.
