In 2021, all the markers of this terroir are there: its floral quality, its slender minerality, its propulsive character. The definition is impeccable, arched over flesh as juicy as one could wish, a tracing acidity that lengthens the wine, and a finely chiselled tannic structure. Winemaking
Intra-plot selection. Destemming, manual sorting, vatting at controlled temperature. Traditional alcoholic fermentation. Vatting time averages 33 days. Gentle, slow extraction in infusion mode. Maceration protected from air. Blending in December 2021.
Ageing
16 months, 55% in new barrels, 20% in one-wine barrels, 25% in amphoras and 20 hl oak casks.
Terroir
On the western plateau of Saint-Emilion, on the former parish of Saint-Martin de Mazerat. Clay-limestone soils. Planting density: 7,200 vines/ha.
