Malolactic fermentation in barrels.

For the fourth consecutive year, we carried out the alcoholic fermentation of part of the production in new 600-litre barrels.

We sorted the grapes berry by berry and crushed them by hand. This allowed us to compare the development of the alcoholic fermentations in vat and in barrel. We are very satisfied with the results: the wines are rounder, more concentrated, with more sweetness, and flavours of fresh red fruit and vanilla.

Ageing

16 months (85% in new barrels, 15% in one-wine barrels).

Food pairings

Grilled pork ribs, herb-roasted pork chops, rib steak, duck fillet with blackcurrant, grilled black pudding. Hard cheeses.

Terroir

On the western plateau of Saint-Emilion, on the former parish of Saint-Martin de Mazerat. Clay-limestone soils. Planting density: 6,600 vines/ha.
